Here’s how we make Gongura Pachadi:
- Clean the Gongura Leaves: Pick the leaves from the stems, wash them thoroughly, and let them dry.
- Cook the Leaves: Heat oil in a pan, add the leaves, and fry until they wilt completely.
- Prepare the Spice Mix: In the same pan, fry red chilies and spices until crisp, then blend with garlic and salt to make a smooth paste.
- Combine: Add the fried leaves to the spice mix and pulse to get a coarse texture.
- Temper (Optional): You can temper the chutney with curry leaves, chana dal, and urad dal if desired.
