Here’s how we  make Gongura Pachadi:

  1. Clean the Gongura Leaves: Pick the leaves from the stems, wash them thoroughly, and let them dry.
  2. Cook the Leaves: Heat oil in a pan, add the leaves, and fry until they wilt completely.
  3. Prepare the Spice Mix: In the same pan, fry red chilies and spices until crisp, then blend with garlic and salt to make a smooth paste.
  4. Combine: Add the fried leaves to the spice mix and pulse to get a coarse texture.
  5. Temper (Optional): You can temper the chutney with curry leaves, chana dal, and urad dal if desired.
