Maagaya, also known as Magaya or Magai, is a traditional sun-dried mango pickle from Andhra Pradesh. It’s made with raw mangoes that are cut into pieces, marinated in salt and turmeric, and then sun-dried. The key spice in Maagaya is fenugreek, which gives it a distinctive flavor.

Selection of Mangoes: Choose mature, firm, and sour mangoes for the best taste.
Preparation: Clean the mangoes, remove the stems, and cut them into pieces.
Marination: Mix the mango pieces with turmeric powder and salt, and let them sit for some time to release moisture.
Sun-Drying: Spread the mango pieces on a clean surface under direct sunlight to dry.
Seasoning: Once dried, the mango pieces are mixed with fenugreek powder, red chili powder, and seasoned with mustard seeds, red chilies, and asafoetida in oil.
The result is a tangy and spicy pickle that can be enjoyed with rice, or even used to make chutneys and dals
